Valentine’s Specials: Love Cookies – Rose and Pistachio Cookies

Valentine’s day is coming… and all the more reason to bake :D 
Here’s a rose and pistachio cookies.. these are bite sized. and i warn you not to eat the cookie dough, you ll definitely finish the dough if you taste this before its baked! :D 
and the smell these cookies give out when you are baking… ooooffff the house is filled with warm rose fragrance..

Ingredients:

  • ​Flour – 120gm
  • Sugar – 100gm
  • Butter – 100gm
  • Egg yolk – 1
  • baking powder -1/2 teaspoon
  • Rose water – 2 tablespoons
  • Chopped Pistachio – 30gm
  • Dried rose petals – handful (optional)
  • Pink food colouring (optional) 

Method:

  • If you have pistachio with peel, blanch the pistachios and rub the peels off with a tea towel. Chop the pistachios into small bits and toast them for a couple of minutes in the oven.  
  • In a large bowl, cream the butter and sugar until light, pale and smooth. 
  • Mix the egg yolk to the sugar butter mixture. 
  • Add the rose water/ syrup and food colour.
  • Sift the flour and baking powder. Roll the dough
  • Fold the chopped pistachios and rose petals into the dough. 
  • Roll the dough into a log shaped roll and cover it with cling film. 
  • Chill it in the refrigerator for 1-2 hours.
  • Preheat the oven to 180 degrees celsius. Line the baking tray with parchment sheet. 
  • Cut the log into small bits and bake for about 10-12 minutes. 
  • Once baked, let it cool on a cooling rack.
  • Store in an airtight container.
