Here’s a rose and pistachio cookies.. these are bite sized. and i warn you not to eat the cookie dough, you ll definitely finish the dough if you taste this before its baked! :D

Here’s a rose and pistachio cookies.. these are bite sized. and i warn you not to eat the cookie dough, you ll definitely finish the dough if you taste this before its baked! :D

Ingredients:
- Flour – 120gm
- Sugar – 100gm
- Butter – 100gm
- Egg yolk – 1
- baking powder -1/2 teaspoon
- Rose water – 2 tablespoons
- Chopped Pistachio – 30gm
- Dried rose petals – handful (optional)
- Pink food colouring (optional)
Method:
- If you have pistachio with peel, blanch the pistachios and rub the peels off with a tea towel. Chop the pistachios into small bits and toast them for a couple of minutes in the oven.
- In a large bowl, cream the butter and sugar until light, pale and smooth.
- Mix the egg yolk to the sugar butter mixture.
- Add the rose water/ syrup and food colour.
- Sift the flour and baking powder. Roll the dough
- Fold the chopped pistachios and rose petals into the dough.
- Roll the dough into a log shaped roll and cover it with cling film.
- Chill it in the refrigerator for 1-2 hours.
- Preheat the oven to 180 degrees celsius. Line the baking tray with parchment sheet.
- Cut the log into small bits and bake for about 10-12 minutes.
- Once baked, let it cool on a cooling rack.
- Store in an airtight container.
