S’mores cupcakes, thats what we are doing this time with BC Egg. I have been working with these guys for the past few months, did you know?  BC Egg is a non-profit organization that manages all the egg farms around BC.

BC is home to about 136 Egg farmers of which 80% are in Lower mainland and Fraser Valley. You can also trace the origins of your egg via BC Eggs. You can find more about them on their website BC EGG.

The weather is perfect for some toasty Cupcakes, this s’mores cupcakes has a slight twist to your regular cupcakes. These are smores cupcakes that is infused with speculoos cookie butter and topped with rich chocolate ganache and topped with toasty marshmallow frosting.

S'mores Cupcakes

Speculoos Cookie butter cupcakes with dark chocolate ganache and toasted Marshmallow Frosting

Ingredients

Speculoos Cupcakes

  • 115 gm Butter 1 stick
  • 125 gm Speculoos Cookie Butter 1/2 cup
  • 150 gm Dark Brown Sugar 3/4 cup
  • 3 Eggs Large
  • 2 tbsp Golden syrup
  • 80 ml Milk 1/3 cup
  • 11/2 tsp Baking powder
  • 180 gm All Purpose flour 11/2 cup

Dark Chocolate Ganache

  • 125 ml Heavy/ Whipping Cream 1/2 cup
  • 100 gm Bittersweet/ Dark Chocolate chopped

Toasted Marshmallow Frosting

  • 3 Egg Whites
  • 150 gm Caster Sugar 3/4 cup
  • Pinch Cream of Tartar
  • 1 tsp Vanilla Extract
  • 2-3 tsp Lemon juice /Apple Cider Vinegar

Instructions

Speculoos Cupcake

  1. Preheat the oven to 350F /180C degrees. Line the cupcake tin with liners

  2. In a bowl fitted to a paddle attachment of a stand mixer, cream the butter and dark brown sugar until pale and fluffy

  3. Add and beat one egg at a time. Add the golden syrup in the bowl

  4. Sift the flour and baking powder into the bowl in batches, alternating with milk. Whisk thoroughly until completely incorporated.

  5. Scoop the batter into cupcake liners, bake for 18-20 minutes.

  6. Using a wooden skewer, check to see if completely baked. Once baked, let the cupcakes
    cool on a cooling rack

Dark Chocolate Ganache

  1. In a small pan, heat the cream on low – medium heat. Once the cream heats up,
    remove from heat.
    Add the chocolate in a small glass/ ceramic bowl, pour the hot cream over the chocolate. Let it rest for 5-7 minutes

  2. Mix the ganache mixture using a whisk until completely mixed together

Marshmallow frosting

  1. Clean the bowl of the stand mixer, whisk and the spatula with lemon juice or vinegar. Add the egg whites, cream of tartar, lemon juice and sugar in the bowl of the stand mixer.

  2. On a bowl with simmering hot water, heat the mixture so that all the sugar is
    completely dissolved.

  3. Gently whisk the mixture until its frothy. Once the sugar is dissolved and the mixture
    is around 170 F/ 75 C, remove from heat. Whisk on medium high to high speed for 5-8
    minutes or until stiff peaks are formed.

  4. Add the vanilla and whisk for another 30 seconds.

Assembly

  1. Spoon over the ganache on the cupcakes and let them chill in the refrigerator for
    5-10 minutes.

  2. Pipe the marshmallow frosting and torch it away using a kitchen torch!

  3. If you don’t own a kitchen torch, you can also torch is using the broil mode of
    your oven for 5-10 seconds.
