Simple vanilla cupcakes with vanilla buttercream frosting

Ingredients

(Makes about 9 cupcakes)

Cupcakes

  • Cake flour – 100gm
  • Sugar – 100gm
  • Butter – 100gm
  • Eggs – 2 large
  • Baking powder – 1 teaspoon
  • Vanilla extract – 1 teaspoon
  • Buttermilk – 120 ml

Vanilla buttercream frosting

  • Butter – 100gm
  • Icing sugar -120-150gm
  • Milk -1 tablespoon
  • Vanilla extract – 1/2 tablespoon
  • Violet gel colour – optional
I went binge shopping on wilton and got a whole lot of goodies… so i wanted to use couple of them on the cupcakes! 
Method
Cupcakes

  • Preheat the oven to 190 degrees celsius. Line the muffin tray with cupcake liners. (I am in love with those purple cupcake liners, they make the cupcakes extra pretty 😀 )
  • Cream in the butter and sugar until creamy, light and fluffy. 
  • Whisk the egg whites in a separate bowl until very fluffy ( I noticed that this makes the cupcakes very light and soft)
  • Add the whipped egg whites to the butter-sugar mixture. 
  • Add the baking powder, vanilla extract and the egg yolks and beat using an electric blender. 
  • Sift the flour in the mix. 
  • Add the buttermilk and beat till completely mixed.
  • Fill the cupcake liners to about 2/3rd of the liner. 
  • Bake the cupcakes for about 20-22 minutes. Check with a tooth pick to see if its completely baked.
  • Cool them on a cooling rack 
Vanilla buttercream frosting

  • Cream the butter until creamy and pale for about 3-5 minutes.
  • Add a batch of the icing sugar. 
  • Add the vanilla extract and the tablespoon of milk and beat. 
  • Add the rest of the icing sugar and beat for a couple of minutes. 
  • Add the purple gel colour in small amounts using a tooth pick and whisk. Add until you get the required shade of purple. ( I wanted mine to match the cupcake liners)
I am still learning to pipe properly, slowly but surely i am getting there 🙂
These were for my lil one’s 4 month birthday
