Method
Cupcakes
Cupcakes
- Preheat the oven to 190 degrees celsius. Line the muffin tray with cupcake liners. (I am in love with those purple cupcake liners, they make the cupcakes extra pretty 😀 )
- Cream in the butter and sugar until creamy, light and fluffy.
- Whisk the egg whites in a separate bowl until very fluffy ( I noticed that this makes the cupcakes very light and soft)
- Add the whipped egg whites to the butter-sugar mixture.
- Add the baking powder, vanilla extract and the egg yolks and beat using an electric blender.
- Sift the flour in the mix.
- Add the buttermilk and beat till completely mixed.
- Fill the cupcake liners to about 2/3rd of the liner.
- Bake the cupcakes for about 20-22 minutes. Check with a tooth pick to see if its completely baked.
- Cool them on a cooling rack
Vanilla buttercream frosting
- Cream the butter until creamy and pale for about 3-5 minutes.
- Add a batch of the icing sugar.
- Add the vanilla extract and the tablespoon of milk and beat.
- Add the rest of the icing sugar and beat for a couple of minutes.
- Add the purple gel colour in small amounts using a tooth pick and whisk. Add until you get the required shade of purple. ( I wanted mine to match the cupcake liners)
I am still learning to pipe properly, slowly but surely i am getting there 🙂
These were for my lil one’s 4 month birthday
