St. Patrick’s day is here, not that we really celebrate but its all another excuse to make more cakes! This time its my little pot o’ gold cereal milk cake, what makes it special is all deep oaty flavor in the cake that works perfectly with the rich golden caramalised white chocolate and fun little lucky charm marshmallows!
Just an absolute delight of teatime snack, this cereal milk cake complete with a topping of lucky charms is definitely what you want to bake this St. Patrick’s Day. One bite and you too can feel that luck of the Irish.

Cereal Milk Cake:
- A toasted oat flavoured sheet cake with deep nutty notes from the milk. You can make this into a 8″x 2″ deep cake pan too. I used Lucky charms for the cereal milk soak. You can always brush a little bit of cereal milk leftover on to the hot cake for a more intense and moist cake.
Caramalised white chocolate frosting:
- You can find the Caramalised White Chocolate recipe and step by step instruction to make it. The caramelised white chocolate adds a whole new texture to the cake. Alternatively you can also use dark chocolate/ salted caramel or even cookie butter that is your speculoos
- Garnish the cake with the marshmallow charms from your cereal box!
Pot o' Gold Cereal Milk Cake
Pot o' Gold Cereal Milk Cake: Lucky Charms cereal milk sheet cake with caramalised white chocolate frosting and lucky charm garnish
Ingredients
Caramalised white Chocolate (link to recipe and steps above)
Cereal Milk
- 180 ml Milk / milk alternative ¾ cup
- 50 gm Lucky charms cereal without the marshmallow bits (charms)
Cereal Milk Cake
- 150 gm Salted Butter 1¼ stick
- 60 ml Vegetable/ canola oil ¼ cup
- 150 gm Granulated sugar ¾ cup
- 3 XL Eggs or 4 L eggs
- 120 ml Cereal Milk ½ cup
- 200 gm All purpose flour 1½ cup + 2 tsp
- 2 tsp Baking Powder
Caramalised white chocolate frosting
- 125 gm Caramalised white chocolate
- 60 ml Whipped/ Heavy Cream ¼ cup
- 120 gm Cream Cheese 4 oz.
- 30 gm Salted Butter ¼ stick
- 100 gm Icing Sugar 1 cup

Cereal Milk
In a small bowl, add the cold milk to the cereal without the marshmallow bits. Let the cereal soak in the milk for 30 minutes to overnight. The longer you let the flavors soak the more intense it is.
Strain the cereal and milk to get the milk when ready to bake.
Cereal Milk Cake (9x9")
Preheat the oven to 350°F / 180°C. Grease and line a 9x9" square tin.
In bowl fitted to the paddle attachment on a stand mixer, add the butter, sugar and oil. Cream the fats and sugar on medium speed for 3-4 minutes until pale and fluffy.
Add and beat one egg at a time. Add the cereal milk into the wet ingredients in the bowl.
Sift the dry ingredients (flour and baking powder) into the wet ingredients in small batches.
Mix thoroughly and pour the batter into the square cake tin. Bake for 30-35 minutes or until its golden brown. The cake must be springy to touch.
Remove from oven and let it cool on a cooling rack.
Caramalised white chocolate frosting
Heat the cream until it starts to boil, pour the hot cream into the caramalised white chocolate. Let it sit for a couple of minutes before you start to mix them thoroughly. This is your caramalized white chocolate ganache
Let the caramalized white chocolate ganache come to room temperature
In a bowl fitted with the whisk attachment on a stand mixer. Add the cream cheese, butter and icing sugar. Whisk on low - medium speed for 2-3 minutes.
Add the caramalized white chocolate ganache into the bowl, whisk for another couple of minutes until its silky smooth and luscious to spread.
Pot o' Gold Cereal Milk Cake Assembly
Place the sheet cake on a cake board/ tray. Add dollops of caramalized white chocolate frosting on the cereal milk cake.
Spread the frosting using an offset spatula or any regular spatula. You can also pipe this frosting with any piping tip you wish.
Add Lucky charms marshmallow on top of the frosting for a garnish!
