Misty Friday night cupcake: Hot chocolate stout cupcake with marshmallow center and stout chocolate buttercream frosting

So last Friday we went out for dinner and when we got back home it was so misty outside. Just the perfect weather for some hot chocolate and marshmallows. Things change once you have a lil one, instead of going out on Friday nights you stay in haha.

That’s the cupcake for the day. My misty Friday night cupcake, an adult hot chocolate cupcake.

It’s a hot chocolate stout cupcake with a googey marshmallow center, topped with a stout chocolate buttercream frosting.

Ingredients

Cupcakes

(Makes 9 cupcakes)

  • Flour – 100gm
  • Sugar – 50gm
  • Brown sugar – 50gm
  • Butter -100gm
  • Eggs – 2 large
  • Baking powder – 1 teaspoon
  • Vanilla extract – 1 teaspoon
  • Dark chocolate – 50 gm
  • Cocoa powder – 50gm
  • Stout – 50ml
  • Buttermilk – 100 ml
  • Marshmallows (mini or large) – bag 

Stout  chocolate buttercream frosting

  • Butter – 100gm
  • Dark chocolate – 100gm
  • Cocoa powder – 2-3 tablespoons
  • Icing sugar – 150-175 gm
  • Vanilla extract – 1/2 teaspoon
  • Stout -2-3 tablespoon
Method

Cupcakes

  • On a simmering pan, add the dark chocolate, cocoa powder and half of the butter in a bowl.
  • Keep whisking until the dark chocolate an butter melt. Once it is melted and mixed thoroughly, let it cool.
  • Preheat the oven to 190 degree Celsius and line the muffin tin with cupcake liners.
  • Cream the other half of the butter with an electric blender until light and fluffy.
  • Add the sugar.
  • Beat in one egg at a time until the butter, sugar and eggs are whipped light and fluffy.
  • Add In the baking powder and vanilla.
  • Sift the flour in batches and add in the chocolate mix that was made.
  • Add the stout.
  • lastly add the buttermilk and beat until completely mixed.
  • Pour the batter to 1/3 of the cupcake liner.
  • Drop in some marshmallows ( I used mini marshmallows, you can use the large ones too!)
  • Pour the rest of the batter covering the marshmallows.
  • Bake for about 20-25 minutes and check with a tooth pick to see if it’s baked. It should come out clean.
  • Although since the marshmallow is in the center and melted it sometimes feels bit mushy but it’s ok.
  • Once the cupcakes are out, stuff the mushy center part of the warm cupcakes with more marshmallows.
  • Let the cupcakes cool on a cooling rack.
Stout chocolate buttercream frosting

  • Melt the dark chocolate in a bowl on a simmering pan and once melted, take it off the heat and let it cool a bit.
  • Cream the butter until fluffy and light.
  • Add the icing sugar and the dark chocolate in batches and whip.
  • Add in the vanilla and the stout.
  • Add the last batch of icing sugar. ( add the icing sugar as much as needed for a pipable consistency!)
Once the cupcakes are cooked, frost them with the buttercream frosting, dust them with icing sugar and voila there you have your adult misty Friday night cupcakes!
