Mandarins! These beauties caught my eye, with their pretty little leaves and beautiful colour. I know its strange but I cannot have anything citrusy to eat, I mean except bakes. I get sick as soon as I have a wee bite of it. Mandarin and poppy seed loaf, the loaf is infused with mandarin juice and mandarin zest. This gives the mandarin and poppy seed loaf that beautiful colour. Sweet and earthy flavors from the Mandarin and rosemary simple syrup gives the loaf that extra little citrusy oomphf 😀

Ingredients

Mandarin and poppy seed loaf

  • 120 gm All purpose flour 1 cup
  • 115 gm Butter 1 stick
  • 2 Large eggs
  • 100 gm Sugar 1/2 cup
  • 125 ml Mandarin Juice 1/2 cup
  • 1 tsp Mandarin Zest
  • 1 1/2 tsp Baking powder
  • 1-2 tbsp Poppy Seed
  • 1 Mandarin for topping

Mandarin & Rosemary Syrup

  • 125 ml Mandarin Juice 1/2 cup
  • 60 ml Water 1/4 cup
  • 100 gm Sugar 1/2 cup
  • 1 Sprig Rosemary

Instructions

Mandarin and poppy seed loaf

  1. Preheat the oven to 180 C/ 350 F. Grease and line the loaf tin (7"x 3.25") with parchment paper.

  2. In a bowl, fitted with paddle attachment on a stand mixer. Cream the butter and sugar until light and fluffy. 

  3. Add and beat one egg at a time. Add the mandarin juice and zest and whisk. 

  4. Sift the dry ingredients (AP Flour and Baking powder) into the wet ingredients. Mix until completely incorporated.

  5. Add and fold the poppy seeds into the batter. Pour the batter into the prepared tin. I added fresh mandarin slices to be baked on the loaf, you can also add it after the loaf is baked like a garnish instead. 

  6. Bake for 30-35 minutes. Check with a skewer to see if completely baked. 

Mandarin & Rosemary Syrup

  1. Add all the ingredients in a pan. Heat and cook on low heat until the sugar is dissolved and is syrupy and thick. 

  2. Pour the hot syrup or brush it on the loaf. Enjoy with a cuppa!
