Father’s Day – Breakfast cupcakes: Jack Daniels and candied bacon cupcakes with maple buttercream frosting

It’s Father’s Day! Hence a breakfast cupcake… Booze, bacon, homemade waffles and mape syrup. there’s your breakfast 😉
Ingredients

Candied bacon

  • Jack Daniels – to soak
  • Bacon strips – 4-5 strips
  • Brown sugar – 50gm
  • cinnamon powder – 1/4 teaspoon
  • Vanilla sugar – to sprinkle 


Cupcakes

  • Cake flour – 100gm
  • Butter – 100gm
  • Sugar – 60gm
  • Brown sugar – 40gm
  • Eggs – 2 large
  • Vanilla essence – 1 teaspoon
  • Baking powder – 1 teaspoon
  • Jack Daniels – 4-5 tablespoons
  • Buttermilk – 100ml

Maple buttercream frosting

  • Maple syrup – 30ml
  • Butter – 100gm
  • Icing sugar – 100-120gm
  • Vanilla essence – 1/2 teaspoon
  • Jack Daniels – 1 tablespoon
Method
Candied Bacon

  • Preheat the oven to 230 degrees celsius.
  • Soak the bacon strips in Jack Daniels. Mix brown sugar and cinnamon in a little bowl.
  • Lay out the bacon strips on steel foil and sprinkle it on both sides of the bacon.
  • Sprinkle vanilla sugar on just one side.
  • Bake the bacon strips in the oven until brown and crispy. Chop into small pieces immediately or it will be difficult to chop it into small pieces as it gets hard.

Cupcakes

  • Preheat the oven to 190 degrees celsius and like the muffin tin with cupcake liners.
  • Cream the butter, sugar and brown sugar with an electric blender until it resembles wet sand.
  • Add in one egg at a time and beat it slowly. 
  • Add in the baking powder and vanilla essence. 
  • Sift the flour into the mix and beat it.
  • Mix in the Jack Daniels and buttermilk. Beat until all the ingredients are mixed together.
  • Fill in the batter to about 2/3 of the cupcake liner and bake for 20-25 minutes. Check from about 18 minutes. 
Maple buttercream frosting

  • Cream the butter until light and fluffy. 
  • Add the icing sugar in small batches, add the first batch and beat the butter and icing sugar together. 
  • Add the vanilla essence and maple syrup. 
  • Add the next batch of icing sugar. 
  • To have an extra kick, add in a tablespoon of Jack Daniels
  • Add the rest of the icing sugar and mix well until it reaches a smooth consistency. 
Once the cupcakes are cooled. Frost them with the buttercream. 
I garnished it with a piece of bacon, a star shaped cut out waffle and also a drizzle of the maple syrup.
