Earl Grey Shortbread Cookies with Lavender Glaze

These are Earl grey Shortbread cookies with lavender glaze, made from the lavender syrup.

Earl- Grey Shortbread Cookies:

  • Flour – 140gm 
  • Almond flour – 50gm
  • Sugar – 3 tablespoon
  • Butter – 120gm
  • Earl – Grey Tea Leaves – 2 teaspoons  (ground)

Lavender Glaze

  • Lavender syrup – 2-3 teaspoons
  • Icing sugar – 100gm
  • Violet food colouring (optional)

Earl Grey Shortbread Cookies:

  • In a large bowl, sift the flour and almond flour and the earl grey tea. Add the sugar.
  • Using a pastry cutter or your fingers, mix the butter into the flour mix. 
  • Chill in the refrigerator for 30 minutes to an hour. 
  • Preheat the oven to 180 degrees celsius. 
  • On a well floured surface, roll out the chilled dough and cut into circles (whatever size you like)
  • On a baking sheet, bake for about 10 minutes.
  • Once baked, let them cool on a cooling rack

Lavender Glaze:

  • In a large bowl, sift the icing sugar. 
  • Add the lavender syrup in small teaspoons. (Depending on how strong you want the flavour) 
  • Add a teaspoon or 2 of milk if needed to thin the icing sugar. 
  • Add 2 drops of violet colouring (optional).
