These are Earl grey Shortbread cookies with lavender glaze, made from the lavender syrup.

Ingredients:
Earl- Grey Shortbread Cookies:
- Flour – 140gm
- Almond flour – 50gm
- Sugar – 3 tablespoon
- Butter – 120gm
- Earl – Grey Tea Leaves – 2 teaspoons (ground)
Lavender Glaze
- Lavender syrup – 2-3 teaspoons
- Icing sugar – 100gm
- Violet food colouring (optional)
Method:
Earl Grey Shortbread Cookies:
- In a large bowl, sift the flour and almond flour and the earl grey tea. Add the sugar.
- Using a pastry cutter or your fingers, mix the butter into the flour mix.
- Chill in the refrigerator for 30 minutes to an hour.
- Preheat the oven to 180 degrees celsius.
- On a well floured surface, roll out the chilled dough and cut into circles (whatever size you like)
- On a baking sheet, bake for about 10 minutes.
- Once baked, let them cool on a cooling rack
Lavender Glaze:
- In a large bowl, sift the icing sugar.
- Add the lavender syrup in small teaspoons. (Depending on how strong you want the flavour)
- Add a teaspoon or 2 of milk if needed to thin the icing sugar.
- Add 2 drops of violet colouring (optional).
