Confetti Funfetti Mini Cupcakes: Confetti Funfetti Mini Cupcakes with Vanilla Buttercream Frosting

Ingredients:
(makes about 24 mini cupcakes) 
I made 12 mini and 4 standard size cupcakes
Cupcakes:

  • Flour- 110 gm 
  • Butter – 100gm 
  • Sugar – 100gm 
  • Eggs – 2 large 
  • Vanilla extract – 1 teaspoon
  • Baking powder – 1 teaspoon
  • Milk -80ml 
  • Sugar sprinkles, jimmies, confetti (mix) – a handful or about 100gm. (howmuch ever you want) + for decoration.

Vanilla Buttercream Frosting:

  • Butter – 80gm
  • Icing sugar – 200-250gm 
  • Vanilla – 1 teaspoon 
  • Milk – a dash 

Method
Confetti Funfetti cupcakes:

  • Preheat the oven to 180 degrees celsius. Line the mini/standard muffin with cupcake liners mini/standard. 
  • In a large bowl, cream the butter and sugar until pale and airy. 
  • Beat in one egg at a time, add the milk and vanilla and mix well. 
  • Sift in the flour and baking powder and mix for about a minute until completely incorporated. 
  • Fold in the sprinkles, jimmies and confetti mix into the batter, until thoroughly mixed. 
  • Scoop in about a teaspoon of the batter into the liner, bake for about 15 minutes. Check from about 12 minutes. (for minicupcakes) 
  • for standard size, scoop in about 2/3rd of the liner or an ice cream scoop full of batter into the liner and bake for about 15-20 minutes, check from about 18 minutes. 
  • Once baked, let them cool on a cooling rack, you’ll see that the cupcakes have a colourful specks on them… 

Vanilla Buttercream Frosting:

  • In a large bowl, cream the butter using an stand mixer or electric blender or a hand whisk or just a simple spatula until light, fluffy and pale. 
  • Add the icing sugar in 2 batches and beat for a minute or two. 
  • Add the vanilla and beat for a minute. Lastly add the milk for a smoother consistency and beat for about 30 seconds.
  • Scape down the sides of the bowl and give it one last beat for 30 seconds.

Once the cupcakes are cooled, frost them and sprinkle them with some of the sugar balls, confetti and jimmies mix.
