Ingredients

Coffee cupcakes:
- Flour – 120gm
- Brown sugar – 70gm
- White sugar – 50gm
- Butter – 100gm
- Expresso – 60ml (I used kerala coffee)
- Milk – 30ml
- Cocao powder – 30gm
- Eggs – 2 large
- Instant Coffee powder – 2 tablespoons
- Baking powder – 1 teaspoon
Orange buttercream frosting:
- Butter – 100gm
- Icing sugar – 200-250gm (as required for the piping consistency)
- Orange zest – 1/2 teaspoon
- Cinnamon powder/ ground cinnamon – pinch (can be more if you like a stronger cinnamon flavor)
- Freshly squeezed orange juice – 21/2 tablespoon
Method
Coffee cupcakes:
- Preheat the oven to about 170 degrees celsius and line the cupcake tin with cupcake liners.
- Cream the butter, brown sugar and white sugar until light and fluffy.
- Beat in one egg at a time using an electric blender.
- Add the cocoa powder and coffee powder to the mixture.
- Sift in the flour- baking powder (dry mix) in batches and mix well.
- Add the expresso and the milk and whip the batter for a couple of minutes, until thoroughly mixed.
- Fill the cupcake liners to about 2/3rd and bake for about 18 minuted, check from about 15 minutes. Check with a kebab stick or a tooth pick to see if its completely baked.
Once the cupcakes are baked. Let them cool.
Orange Buttercream Frosting
- Cream the butter until light, pale and fluffy.
- Beat in the icing sugar in batches.
- Add the orange juice and orange zest.
- Beat in the rest of the icing sugar.
- Add a dash of milk if necessary, it gives a nice smooth texture to the buttercream (if you have cream even better).
- Add in the cinnamon powder.
- Whip until the required consistency.
Pipe them on to the cupcakes and enjoy!
These babies taste so GOOD!!! i wasn’t expecting that amazing combination to be honest but they are great…. I also made a big batch of them on order to a restaurant in Goa…. and so i finally have proper internet now, so more excuses for not posting regularly!
