Ingredients:
- Flour – 150gm
- Egg – 1 large
- Dark brown sugar – 90gm
- Vanilla extract – 1 teaspoon
- Baking powder – 1 teaspoon
- Expresso – 2 tablespoon / 30ml
- Butter – 75gm
- Icing sugar – 200gm
Method:
- Cream the butter and sugar, until light and fluffy.
- Beat in the egg until thoroughly mixed.
- Add in the expresso and vanilla.
- Sift in the flour and baking powder and mix well until completely incorporated.
- Chill the dough for about an hour or two.
- Preheat the oven to 180 degrees celsius. Line the baking tray with parchment sheet.
- Roll the dough into small balls using the palms of your hand.
- Roll the cookie dough balls completely in the icing sugar (once or twice) the cookie dough balls have to covered with icing sugar.
- Bake the cookies for about 12-15 minutes.
- Once baked, let them cool on a cooling rack.
