Coffee Crackle Cookies

Since we got a coffee machine at home, there’s just way too much coffee…
 and i am not a coffee person at all (not anymore (-_-) 
But coffee in cakes and cookies oh so delectable!!! :D 

Ingredients: 

  • Flour – 150gm
  • Egg – 1 large
  • Dark brown sugar – 90gm
  • Vanilla extract – 1 teaspoon
  • Baking powder – 1 teaspoon 
  • Expresso – 2 tablespoon / 30ml 
  • Butter – 75gm 
  • Icing sugar – 200gm 

Method:

  • Cream the butter and sugar, until light and fluffy. 
  • Beat in the egg until thoroughly mixed. 
  • Add in the expresso and vanilla. 
  • Sift in the flour and baking powder and mix well until completely incorporated. 
  • Chill the dough for about an hour or two. 
  • Preheat the oven to 180 degrees celsius. Line the baking tray with parchment sheet.
  • Roll the dough into small balls using the palms of your hand. 
  • Roll the cookie dough balls completely in the icing sugar (once or twice) the cookie dough balls have to covered with icing sugar. 
  • Bake the cookies for about 12-15 minutes. 
  • Once baked, let them cool on a cooling rack.
