I have never really had the best of luck with cheesecakes… I think one of the reasons is the low fat cream cheese that is available here.. well obviously you do get better cream cheeses here but I personally think for a teeny tub of 200gm is 500 odd rupee is ridiculous. I made this with the low fat cream cheese and also used some greek yogurt for a good depth of flavour. Made this for a dinner party aaaaaand it was a hit… Its a chocolate chip cookie base, chocochip cheesecake garnished with chunks of chocochip cookie bits and dark chocolate…. just the perfect amount of sweetness is what makes this special đŸ˜‰
Ingredients:
Chocolate Chip Cookie Base:
- Flour – 120 gm
- Butter – 100gm
- Egg – 1
- Dark brown sugar – 75gm
- Sugar – 50gm
- Vanilla extract – 1 teaspoon
- Sea salt – pinch
- Dark chocolate chips – a handful (about 75gm)
Choco- Chip Cheesecake:
- Cream Cheese – 360gm
- Greek yogurt – 125ml
- Sugar – 3 tablespoons
- Eggs – 2 large
- Lemon juice – 2 teaspoons
- salt – a pinch
- Dark chocolate chips – a handful (about 75gm)
Dark Chocolate glaze:
- Dark chocolate – 100gm (melted)
Method:
Chocolate Chip Cookie Base:
- In a large bowl, add the flour, brown sugar, sugar, salt and sugar.
- Mix all of them well, make a well in the middle and add the egg and vanilla extract.
- Mix well. Melt the butter and pour it into the cookie mix.
- Add the chocolate chips and fold into the cookie dough.
- Divide the cookie dough to 3/4 th and 1/4th.
- Flatten the 3/4th of the cookie dough into a thick round disk, the size of the cake pan (10cm) approx.
- Chill it in the refrigerator for about 30-40 minutes.
- Make the remaining 1/4th of cookie dough into small chunks and chill it as well.
- Preheat the oven to 180 degrees celsius. Grease and line the cake tin, place the cookie dough dish in the cake tin.
- Bake for 10 minutes. It needs to be partially baked. Once done, let the cake tin to cool.
- Bake the chocolate chip chunks also for 10 minutes and let it cool.
Choco chip Cheesecake:
- Preheat the oven to 200 degrees celsius.
- In a large bowl, add the cream cheese, greek yogurt, eggs, lemon juice and sugar.
- Beat all until completely mixed.
- Fold in half the choco chips in the batter. Pour the batter on top of the chocochip cookie bas that was partially baked.
- Sprinkle the rest of the choco chips on top of the batter.
- Cover the cake tin with silver foil, bake for 30 minutes.
- Remove the foil and bake for another 15 minutes, until the cake is slightly wobbly.
- Chill the cheesecake for an hour or two.
Finishing the cake:
- Garnish the cheesecake with the chocolate chip cookie chunks.
- Drizzle melted chocolate all over the chocolate chip cookie chunks.
Slice a large piece for yourself and enjoy! :D
