Cherry Brandy Pie

Getting cherries in India is mostly impossible and even if you get them, its only available in some place… aaaand its pricey! You wont believe the prices of blue berries here!!!!
So whenever you find these, you take advantage and make what you want! 
Cherry brandy pie! everything is made from scratch!!! the cherry filling more like pitting the cherries took most of the time! Also when you make pie crust in a hot environment it can be pretty tricky! 
The recipe for the crust is from Loveandoliveoil.

Ingredients
Pie Crust:

  • Flour – 250 gm
  • Ground almonds – 60 gm
  • Sugar – 50 gm
  • Salt – 1 teaspoon
  • Cold Butter- 225 gm
  • Ice/ Cold water – 4-5 tablespoons


Cherry Pie Filling:

  • Cherries – 1 kilo
  • Brandy – 60 ml
  • Sugar – 200 gm
  • Vanilla extract – 1 tablespoon
  • Water – 60 ml
  • Corn flour/ corn starch – 1 tablespoon

Egg wash:

  • Egg -1 
  • Butter – 20gm 
  • Milk – 1 tablespoon
  • Sugar – to sprinkle

Method:
Cherry Pie Filling

  • Add all the ingredients in a heavy bottom pan and cook till thick enough. 
  • Once cooked, let it cool. 
Pie Crust

  • Mix the flour, ground almond and salt in a bowl.
  •  Cut the butter into small cubes and crush it in the bowl with the flour mixture with your fingers, until they all crumb. 
  • Add a tablespoon of water at a time and mix well until it reaches the consistency that its slightly wet and that you can roll. 
  • Divide the mixture into 2 portions. 
  • Roll out the dough and cover it up with cling film and refrigerate it for 30 minutes to an hour (not too cold then it might start breaking when you handle it)
Assembling the pie:

  • Use one of the rolled out dough ball to cover the base of the pie tin and cool it for about 15-20 minutes. 
  • Cut out long thin strips with the other rolled out dough ball. (You can see in the picture that it is crumbling and breaking, the weather was quite hot here and also i dont have a cold surface to work on! was quite disappointed! but trust me once the pie is baked it looks and tastes great!!!)
  • Preheat the oven to 180 degrees celsius. 
  • Remove the pie tin from fridge and fill with the cherry pie filling and start arranging the lattice pie strips. 
  • Arrange the lattice like a basket weave, one up and one down! 
  • Once arranged, brush it with egg wash and sprinkle some sugar over it.
  • Bake in the oven for about 30-40 minutes. Check from about 20 minutes to see if the crust is browned. 
  • Since  the filling is already cooked, once the crust is golden brown. Remove from the oven and let it cool.
Once cooled, refrigerate it for a couple of hours before you serve or you can serve it warm as well! Serve it with a scoop of ice cream or a dollop of whipped cream!!!
