Blueberry cupcakes with white chocolate buttercream frosting

It was my lil one’s 3 month birthday yesterday and i have been having a lil month celeb with a cupcake and a candle. First i thought i was going to make a pink lemonade cupcake then i thought its a lil boy’s cupcake has to be blue :) 
Hence the blueberry cupcake. I have reduced the amount of batter as it is just me and jason again at home, mom is back home. 

Ingredients
(makes 10 small cupcakes)
Cake

  • Cake flour – 60gm
  • Sugar – 50gm
  • Butter – 60gm
  • Egg – 1 large
  • Baking powder – 1/2 teaspoon
  • Buttermilk – 50ml
  • Blueberry juice (the one in the canned blueberries) – 60ml
  • Blueberries – 50gm
  • Vanilla – 1 teaspoon

White chocolate buttercream frosting

  • Butter – 100gm
  • Icing sugar – 100-120gm
  • Vanilla extract – 1 teaspoon
  • White chocolate – 75gm
  • Milk – 1 tablespoon
  • Blue food colour

Method

Cupcake

Initially the plan was just to add blueberry juice but then i decided to add blueberries too. 

  • Preheat the oven to about 290 degrees celsius and line the cupcake tray with cupcake liners
  • Cream the butter and sugar with an electric blender. 
  • Beat the egg white until fluffy. Add the egg white to the butter- sugar mix. 
  • Add the baking powder, vanilla essence and beat. 
  • Add the flour and egg yolk and beat with an electric blender. 
  • Add the buttermilk to the batter. 
  • Add the blueberry juice and the blueberries to the batter and beat with an electric blender.  (I did not fold the blueberries in the batter as i wanted the blueberry bits in the cupcake not whole blueberries). 
  • Fill the batter to 3/4th of the cupcake liner.
  • Bake for about 20-25 minutes. Check at about 18 minutes to see if they are baked. 
White (blue) chocolate buttercream frosting

  • Melt the white chocolate in bowl by simmering it on a pan. 
  • Cream the butter nice and soft. Add in a batch of the icing sugar and white chocolate, beat with an electric blender. 
  • Add in more icing sugar, rest of the white chocolate, vanilla extract and the food colouring, blend it all. 
  • Add the rest of the icing sugar. 
  • Once the cupcakes are cooked. Frost and decorate. 🙂
I added a bit of edible shimmer dust.
