

Banana - honey oats crumble muffins
A soft banana muffin topped with crunchy honey and oats crumble

Ingredients
- Banana muffins: (makes 18 standard size muffins or 9 large bakery style muffins
- Smashed overripe bananas - 120gm
- Wild honey - 100gm
- Butter - 100gm
- Eggs - 2 large
- Dark brown sugar - 100gm
- All purpose flour - 240gm
- Baking power - 2 teaspoons
Honey- Oats crumble
- Rolled oats - 50gm
- All Purpose Flour - 60gm
- Brown sugar - 50gm
- Butter - 30gm
- Honey - 2 tablespoons
Instructions
Banana muffins
- Preheat the oven to 180 degrees celsius and line the muffin tin with liners.
- In a large bowl, add the butter and sugar and cream until light and fluffy.
- Add and beat one egg at a time.
- Add the wild honey and smashed bananas into the mixture.
- Sift the dry ingredients (flour+ baking powder) into the wet mixture. Mix until they are completely incorporated.
Honey- Oats crumble
- In a bowl, add all the ingredients. Crumble the butter with your finger tips and mix it all until it resembles wet sand.
Assembly
- Pour the batter to the half of the liners, top it with a spoonful or two of the honey-oats crumble.
- Bake for 20-25 mins for a standard size muffin and 30-35 minutes for large bakery style muffins.
- Once baked, let it cool on a cooling rack!
- Enjoy these for breakfast with a cuppa!
