Apple Jam Braided Brioche… you guys where do i start on this one? Remember the sweet sweet sticky apple jam? I have just the perfect recipe to use that 😀 its a rich sweet yeasted brioche dough filled with sweet sticky apple jam . the braided sticky brioche is glazed with pumpkin pie spice and toasted crunchy walnuts on top 😉
The braiding of the brioche is like how you would braid your hair. Even tho I do know how to braid hair, I kinda kept messing the brioche braiding up until it looked like this. You can check out the kitchn’s page for some braiding techniques . You can also make apple jam braided brioche into apple jam “Cinnamon roll” styled rolls. Apple jam loaf in a bread tin works too!
Apple Jam Braided Brioche
Sweet sticky homemade apple Jam filled in rich sweet yeasted three Braided Molasses Brioche glazed with pumpkin spices and toasted walnuts
- 250 ml Milk 1 cup
- 2 tsp Yeast
- 3 Large Eggs
- 1 tbsp Sugar
- 2 tbsp Molasses
- 1 tbsp Golden Syrup
- 60 gm Butter (softened) 1/4 cup
- 500 gm Bread Flour 4 Cups
- 100 gm Bread Flour/ AP flour (excess for dusting and rolling)
- 1 batch Apple Jam (click on apple jam recipe)
- 1 Egg yolk
- 2 tbsp Brown sugar
- 1 tsp Pumpkin Pie Spice
- 60 ml Milk
- 60 gm Icing sugar 1/2 cup
- 25 Toasted Walnuts
Add the milk and sugar in a pan and let it simmer. Once its warm add the yeast and let it rest to bloom for few minutes.
Add Molasses, golden syrup and eggs one at a time. Whisk them all together.
Sift the flour in batches until its sticky dough and mix for a few minutes using the hook attachment of a stand mixer.
Add the butter and let the hoo knead the dough for 10-15 minutes or until it becomes smooth ball of dough.
Transfer the dough into an oiled bowl, cover it and let it either rise over night or you can let it stay in a warm corner and let it double in about 1-2 hours.
Preheat the oven to 430F/ 225 C degrees. Divide the dough into 3 portions and roll it out into rectangle on a well floured surface to about 1/2 inch thick.
Spread the sticky apple jam on the rolled out dough. Roll the rectangle jam filled dough into cylinder like you would do cinnamon rolls.
Braid the dough like you would braid the hair. Brush the loaf with egg wash and sprinkle with brown sugar. Bake for about 40-45 minutes or until it turns golden brown.
In a small bowl add milk. Sift icing sugar and pumpkin pie spice and whisk. Add Icing sugar more or less depending on the consistency you like. Glaze the braided brioche.
Garnish with toasted walnuts. Enjoy with a Cup of Joe! 😉
