Ingredients
Makes 9 large cupcakes
Cupcakes
- Self raising flour – 100gm
- Sugar – 100gm
- Butter – 100gm
- Baking powder – 1/2 teaspoon
- Granny Smith (green) -1
- Eggs – 2 large
- Vanilla extract – 1 teaspoon
- Buttermilk – 90 ml
Filling
- Red apple – 1
- Brown sugar – enough to cover the apple (about 3-4 tablespoons)
- Cinnamon – pinch
Crumble
- Flour – 2 tablespoons
- Brown sugar – 1 tablespoon
- Butter – 20gm
- Cinnamon – pinch
Honey buttercream frosting
- Butter – 100gm
- Icing sugar – 120-140gm
- Honey – 30 ml
- Vanilla extract – 1 teaspoon
Start by cooking the Granny Smith apple in a small sauce pan with half a cup of water for about 30 minutes or until it is super soft.
Crumble
- In a small bowl, add the flour, brown sugar, butter and cinnamon.
- Mix it well with your fingers, until it forms a crumble texture.
- Once it becomes crumbly enough, trasfer it to a parchment paper.
- Bake this mixture for a couple of minutes on high heat and let it cool.
Filling
- Chop the red apple into tiny pieces and cover it with a mixture of brown sugar and cinnamon.
Cupcakes
- Preheat the oven to 190 degrees Celsius and line the muffin tray with cupcake liners.
- Cream the butter and sugar with an electric blender until smooth and fluffy.
- Add eggs one at a time an blend.
- Add in the baking powder and the vanilla extract.
- Add the flour to this mixture and blend.
- Add the buttermilk and beat until mixed well.
- Lastly add 2-3 tablespoons (I used 2) of the apple sauce made from the Granny Smith apples.
- Once the batter is ready, fill in 1/3 of the liner with batter.
- Scoop in some of the filling: (apples pieces+ brown sugar + cinnamon ) on to the batter in the cupcake liner.
- Fill the rest batter on this.
- Bake for about 25-30 minutes, check using a tooth pick to see if it’s baked thoroughly.
( the cupcakes might feel bit moist inside but once they are cooled, it becomes nice and fluffy)
Honey buttercream frosting
- Cream the butter with an electric blender until creamy.
- Add in a batch of icing sugar and blend.
- Add the vanilla extract and another batch of icing sugar.
- Add in the honey and a batch of icing sugar and blend until creamy and soft enough to pipe.
- Add more icing sugar if needed.
Once the cupcakes are cooled, frost them with the honey frosting and sprinkle some crumble on the top. đŸ™‚
To be honest i wasn’t sure how the honey frosting would go with the cupcakes, but they paired really well together, and were delicious!
