Apple- Bourbon- Maple Loaf

I have been travelling a bit, been busy a bit and been sick a bit… last few bakes have been slightly disastrous without my baking stuff! but i am back with this đŸ˜€ and super happy how it turned out…and I havent posted in a long time .. anywhooo here’s the recipe

Apple Bourbon Filling:

  • Apple (Granny Smith) – 1 Peeled and chopped up
  • Brown sugar – 50gm
  • Butter – 30gm
  • Bourbon – 2-3 tablespoons

Apple- Bourbon Loaf:

  • Flour – 120gm 
  • Eggs – 2 large
  • Butter – 100gm
  • Brown sugar – 100gm 
  • Baking powder – 1 teaspoon 
  • Apple Filling (from above)

Maple Glaze:

  • Icing Sugar – 75gm
  • Maple Syrup – 2 tablespoons
  • Heavy Cream – 2 teaspoons

Apple Bourbon Filling:

  • In a heavy bottomed pan, add the butter, brown sugar, bourbon and apple pieces. 
  • Let the butter melt and mix with the other ingredients. 
  • Cook for 5-10 minutes on low heat. Swirl the pan a couple of times so the buttery – bourbon goodness mixes completely with the apple chunks. 

Apple – Bourbon Loaf:

  • Preheat the oven to 180 degrees celsius, grease and line the loaf tin with parchment sheet. 
  • In a large bowl, cream the butter and brown sugar. 
  • Add one egg at a time and beat it. 
  • Sift the flour and baking powder and mix it with the mixture. 
  • Fold in the apple – bourbon filling. 
  • Pour the batter into the baking tin. Bake for 25-30 minutes. 
  • Check to see if completely baked about using a wooden skewer. 
  • Once baked, let it cool on a cooling rack.

Maple Glaze:

  • In a bowl, sift the icing sugar to remove any lumps. 
  • Add the maple syrup and cream and whisk it until completely mixed. 
  • Add more icing sugar if you like the consistency more thick or add more cream/maple syrup if you want it more runny. 
  • Pour the glaze over the loaf and let it chill for 15-20 minutes.

Serve with a hot cuppa !
