Amarula fudge cupcake with amarula buttercream frosting

Amarula, it’s a cream liqueur from South Africa made from amarula fruit. You guys should so check out this video on YouTube animals eating amarula ripe fruit. It is super funny!

Getting back to the topic so yeah this people here generally drink it with some milk and a couple of ice cubes. It is quite nice to be honest. đŸ˜‰ Apparently a very girly drink!

I was at a arts festival in a town called Grahamstown. We went to visit Jason’s parents so they can see the lil one. The festival has amazing market, crazy stuff… Clothes, shoes, jewellery and pin buttons, you name it… I bought some home/handmade fudge… They had crazy flavors too like marshmallow, amarula…

Ingredients

(Makes 9 cupcakes)

Cupcakes

  • Flour – 100gm
  • Sugar – 100gm
  • Butter – 100gm
  • Eggs – 2 large
  • Baking powder – 1 teaspoon
  • Vanilla extract – 1 teaspoon
  • Buttermilk – 120ml
  • Amarula – 60ml
  • Amarula fudge – 1 bar (optional or if available)

Amarula buttercream frosting

  • Butter – 100gm
  • Icing sugar – 150-175gm
  • Vanilla – 1/2 teaspoon
  • Amarula – 2-3 tablespoon

Method

  • Preheat the oven to 190 degrees Celsius and line the muffin tin with cupcake liners.
  • Whip the butter and sugar until light and fluffy.
  • Beat in the eggs one at a time.
  • Add the baking powder and the vanilla extract and beat it.
  • Add the flour and the buttermilk and beat until it’s combined.
  • Now add the amarula and mix it.
  • Lastly chop the amarula fudge into tiny pieces and fold it in the batter.
  • Fill in the cupcake liners with 2/3 of the batter.
  • Bake for about 20-25 minutes, check from about 18 minutes. Bake until the tops are golden brown.
  • Once baked, cool them on a cooking rack.

Amarula buttercream frosting

  • Cream the butter until light, pale and fluffy.
  • Add the icing sugar in batches.
  • Add the vanilla extract and the amarula and whip.
  • Add the rest of the icing sugar and whip till it reaches the consistency to pipe.

I piped the cupcakes and sprinked a bit of the fudge on the top as a garnish!
