One year of lil cupcake monkey + Bubblegum Cupcakes

Yes a year of lil cupcake monkey and you probably noticed there was a wee bit of makeover! 
All the little elements in entire title picture was hand drawn by Jason and i managed to learn how to convert them to little chalkboard elements, Thanks to the website welivedhappilyeverafter. Also the blackboard background was made from scratch (just like the cupcakes 😉 ) thanks to Karen Brockney Photography! Those cute lil buntings are from the font KG flavor and frames. 

Bubblegum Cupcakes: Vanilla Cupcakes with Bubblegum Buttercream frosting

A big thanks to all the visitors and blog viewers… here’s to many more years of lilcupcakemonkey! :D 
I have been looking to get bubblegum or cotton candy extract for some time now! but unfortunately like many things you cant find in India, this is one of them. But recently i found this Monin Bubblegum syrup and cotton candy sprinkles. So i thought why not try it. I did not want to overdo the whole bubblegum things before it tastes too artificial or even too sweet. 

Ingredients
Vanilla Cupcakes:

  • Flour – 110gm
  • Butter – 100gm 
  • Sugar – 100gm 
  • Eggs – 2 
  • Vanilla extract – 1 teaspoon
  • Baking powder – 1 teaspoon
  • Milk – 90 ml

Bubblegum buttercream frosting:

  • Butter – 100gm 
  • Icing sugar – 200-300gm (based on the consistency required! Also i live in a hot country so it melts faster with less icing sugar)
  • Milk – a dash 
  • Monin Bubblegum syrup – 1 1/2 tablespoon
  • Vanilla extract – 1/2 teaspoon or 1/4 teaspoon 

Method
Vanilla Cupcakes:

  • Pre-heat the oven to 180 degrees celsius. Line the muffin tin with cupcake liners. 
  • Cream the butter and sugar until light and fluffy. 
  • Beat in one egg at a time until light. 
  • Add in the vanilla extract. 
  • Sift in the flour and baking powder and mix well with small batches of milk. 
  • Pour one ice-cream scoop full of batter or 2/3rd of cupcake liner and bake. 
  • Bake for about 18 minutes. Check with a tooth pick from about 15 minutes. 
  • Once baked, let them cool on a cooling rack.
Bubblegum Buttercream frosting

  • Cream the butter until light, fluffy and pale. 
  • Add the icing sugar in batches. 
  • Beat in the bubblegum syrup and vanilla extract. 
  • Add in the last batch of icing sugar, beat for a couple of minutes with an electric blender or stand mixer or just a plain ol’ spatula. 
  • Once whipped, pop it in a icing bag with which ever sort of tip you like and frost away. 
  • I sprinkled few cottoncandy sprinkles on the cupcake!
