Boozy Caramel – Apple Crisp

This has got to be the most simple yet indulgent dessert for me… Even tho it is super rich its got some healthy bits too 😀 it has apples and crunchy oats. This caramel apple crisp works great for even breakfast… and for those of you who do not want to indulge in a wee bit of alcohol in your dessert/ breakfast you can just skip the whiskey in the caramel and you are good to go… 😀 and for others that want a late night naughty dessert, you have come to the right spot!

Ingredients: (makes 3-4 portions) 
Whiskey Caramel Sauce:

  • Caster sugar – 150gm
  • Heavy Cream – 125ml
  • Butter – 70gm
  • Whiskey – 60ml
  • Sea salt – a pinch

Apple Filling:

  • Granny Smith- 2-3 sliced thin
  • Lemon juice – 1 teaspoon
  • Sugar – 1 tablespoon

Crunchy Oat Streusel:

  • Old- fashioned rolled oats – 45 gm
  • Flour – 60gm 
  • Brown sugar – 100gm
  • Butter (Cold) – 75gm

Method:
Whiskey Caramel Sauce:

  • Before you start the caramel, keep everything weighed and measured for the caramel, coz the caramel can go from amber to burnt in seconds.
  • In a heavy bottomed pan, add the sugar and let it melt slowly until it turns golden brown – dark amber in colour. (Check Pictures 1,2,3 below)
  • As soon as it turns dark, add the cold heavy cream into the sugar solution. This will bubble a lot, take care while you do this also maybe try not to have little ones near the stove as it splutters quite a lot.
  • Add the butter and mix well and let it boil for a minute. 
  • Take the pan out of the heat, add the whiskey and sea salt and stir it thoroughly. 
  • Store it in a small jar and use it on everything !! :D

Apple Filling:

  • Place the thin slices of apples in a bowl.
  • Sprinkle the lemon juice and sugar.
  • Refrigerate for 30 minutes – 1 hour.

Crunchy Oat Streusel:

  • In a bowl, add the flour, brown sugar and rolled oats. Mix thoroughly
  • Add the cold butter and crumble it with your finger tips and mix with the dry ingredients. 
  • The mixture should resemble wet sand. 

Caramel- Apple Crisp:

  • Pre-heat the oven to 180 degrees celsius. 
  • Layer the thin sliced apples in the ramekins. 
  • Layer a big dollop of whiskey caramel sauce on your apple slices (or) You can either layer the apple slices with whiskey caramel sauce.
  • Scoop the crunchy oats streusel as a big mounted dollop on top of the apple- caramel layers. 
  • Bake for about 25-30 minutes or until the streusel is golden brown. 
Eat it right away with a giant dollop of cream or ice cream… ​
